Momento Hospitality has lodged plans for level one of the multi-level pub to be transformed into a 194-seat restaurant and dining area at the Waterloo Road venue.
It will include an expansive kitchen, bar, a large main dining area, four private dining spaces and an outdoor balcony, according to the proposal.Momento Hospitality’s chief executive Marcello Colosimo said plans were adjusted for the first floor due to COVID-19.“It was originally approved as a co-working office space for the use of the public, but this isn’t something that can be done for the next few years,” Mr Colosimo said.“We have had to pivot and revisit out plans.”
He said that opening a new restaurant was a no-brainer because of the demand for more “quality food offerings” in Macquarie Park.“Creating memories is our mission. This will allow people to meet and enjoy a high quality but accessible dining experience without having to leave the business park.
The fitout which has been designed by Edith Clarke at Archebiosis Design will also feature private spaces for dining and small events.The hospitality group has also requested to extend trading hours to 7am-11pm seven days a week.More parking has also been proposed taking the total car spaces to 85.
